  1. Add the greens, almonds, pomegranate seeds, and dried apricots into a large salad bowl. 
  2. Mix the olive oil, dijon, vinegar, salt, and pepper in a small jar.
  3. Put the lid on the jar and shake well to mix. 
  4. Pour the vinaigrette over the top of the salad and toss.
  5. Break goat cheese into chunks and gently toss to combine.
